Everyone at the 249th National Meeting & Exposition of the American Chemical Society when some new research was presented. The research showed that by adding a teaspoon of coconut oil to boiling water with a half-cup of non-fortified white rice will cut the number of calories your body takes by 50-60%.
You’re supposed to let the mixture simmer for 20 to 40 minutes. You are then supposed to refrigerate it for 12 hours.
The researchers who presented their findings explained that rice contains two kinds of starch—one that is easily digestible, and one that’s resistant. Our bodies do not naturally produce the enzymes that are needed in order to digest the resistant kind, meaning that we can’t break down the starch and transform it into the sugar that goes into our bloodstream.
Scientists wanted to find a way to get the rice to have more resistant starch, rather than digestible ones. By doing this, there will be less sugar in our bodies, which means there will be less fat.
By adding coconut oil into the cooking process, the starch granules become resistant to the action of digestive enzymes. Even more so, by letting the rice cool for 12 hours, it pushes the process even further.
